2013 Golden Goat Appetizer Contest



My husband's family has had an appetizer contest for the past 4 years. Last year, the Golden Goat apron was introduced, so competition has increased.  Recently, the 2013 Golden Goat Appetizer Contest took place, and as reigning champions, my husband and I had something to defend!

Everything was so tasty this year, but sadly, we came in second place.  But lucky for you, I am going to share ALL of the appetizers with you!

First Place: Kahlua-Pecan-Brown Sugar Baked Brie

Ingredients

  • 1 whole wheel of Brie (Costco sells a 19 ounce Brie wheel which is perfect for this recipe)
  • 1 cup Kahlua
  • 1 cup light brown sugar, packed
  • 1 cup chopped pecans (some were left whole for looks)
  • Accompaniment: crackers

Directions


Preheat oven to 350 degrees. Start by carefully slicing the rind off the top of the Brie wheel, but do not remove completely. Bake for 15 minutes. When the Brie is done baking, the top can be easily removed to expose the creamy cheese. ( If you have a really good brie, the rind is edible and you don't have to cut it off. Also I only put it in for 5 minutes or so, just to get it warm)  


While the Brie is baking (I actually do this part before baking the brie to give the sauce time to thicken), in a medium saucepan, bring Kahlua and brown sugar to a boil and simmer for 10-15 minutes, until a syrupy consistency is made. Throw the pecans in for 2 minutes at the end to warm them through and completely cover with the sauce. (I found it thickened up if you let it sit a little bit after cooking it)



Remove the Brie from the oven (removing top rind) and pour Kahlua sauce over the Brie. 



Serve warm with crackers.

Second Place: Pancetta Crisps with Goat Cheese and Pear

Ingredients

  • 12 thin slice pancetta (about 1/3 pound)
  • 1 Bartlett pear
  • 1/2 (4 oz.) package goat cheese, crumbled
  • Honey
  • Garnish: fresh thyme springs

Directions

Arrange pancetta slices in a single layer on an aluminum foil-lined baking sheet. Bake at 450 degrees for 8 to 10 minutes  or until golden. Transfer to a paper towel-lined wire rack using a spatula. Let stand for 10 minutes or until crisp.

Core pear with an apple corer (a melon baller works great too). Cut pear crosswise into 12 thin rings. Arrange on a serving platter. Top evenly with pancetta and goat cheese. Drizzle with honey just before serving. Garnish, if desired.

** Pepper was left out from the original recipe; this can be sprinkled over the pancetta and goat cheese if desired.

Third Place: Grilled Stuffed Jalapeños

Ingredients

  • 2 slices center-cut bacon
  • 1/2 cup (4 oz.) cream cheese, softened
  • 1/2 cup (4 oz.) fat-free cream cheese, softened
  • 1/4 cup (1 oz.) shredded extra-sharp cheddar cheese
  • 1/4 cup minced green onions
  • 1 teaspoon fresh lime juice
  • 1/4 teaspoon kosher salt
  • 1 small garlic clove, minced
  • 14 jalapeño peppers, halved lengthwise and seeded
  • Cooking spray
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped seeded tomato

Directions

Preheat grill to medium-high heat.

Cook the bacon in a skillet over medium heat until crisp. Remove bacon from pan, and drain on paper towels. Crumble bacon. Combine crumbled bacon, cheeses, and next 4 ingredients (through garlic) in a bowl, stirring to combine. Divide cheese evenly and fill the pepper halves. Place peppers, cheese side up, on grill rack or grill grate coated with cooking spray. Cover and grill peppers 8 minutes or until bottoms of peppers are charred and cheese mixture is lightly browned. Place the peppers on a serving platter. Sprinkle with cilantro and tomato.

Note:
If making these poppers for a party, you can stuff the peppers, cover, and chill. Then grill just before your guests arrive.

Fourth Place: Asian-inspired Wings

Ingredients

  • 3 pounds wings
  • 2 tablespoons corn oil
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons ground ginger
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Directions

Preheat oven to 350 degrees. Combine corn oil, salt and pepper; brush on wings. Cook for 15 to 20 minutes. Combine all other ingredients (soy sauce, sesame oil, rice vinegar, ground ginger) and baste wings.  Cook for another 25 to 30 minutes.  Baste occasionally until cooked through.
