Over the last month, fish has been on sale - we were able to get fresh salmon for $4.99 a pound last week! One of our favorite go-to recipes for salmon is Garlic Salmon Linguine from Taste of Home. We've changed it up a bit, but it's still super easy and quick.
The ingredients and directions below reflect the changes we have made. The biggest change is that we always use fresh salmon instead of canned salmon. We also add a little extra pinch of cayenne pepper to give the dish a little bit more of a kick. If you don't have linguine - don't worry! You can always switch it up and use fettuccine instead. The last time we made this dish we used a mixture of linguine and fettuccine!
Cooking time is about 20 minutes, and yields approximately 6 servings.
Ingredients
- 1 package (16 oz.) linguine
- 3 garlic cloves, minced
- 1/3 cup olive oil
- 1 pound fresh salmon
- 3/4 cup chicken broth
- 1/4 cup minced fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
Directions
- Cook the linguine according to package directions.
- Meanwhile, in a large skillet, sauté garlic in oil for 1 minute or until crisp-tender.
- Stir in the salmon, broth, parsley, salt and cayenne. Cook until heated through.
- Drain linguine; add to salmon mixture and toss to coat.
