Newlywed's Guide to Cooking: Alfredo Chicken Tortellini


I'll be the first to admit that when I got married, neither my husband or I were the greatest cooks.  Over the last nine months, I have to say that we have improved greatly!  

Our favorite meal this week was Alfredo Chicken Tortellini - which was inspired by a Taste of Home recipe (found here).  We changed it up a bit with what we had on hand, and added more chicken, bacon, and tortellini so we would have leftovers.





Ingredients

  • 12 ounces of tortellini (our favorite is from Trader Joe's - with mixed cheese filling)
  • 3 boneless skinless chicken breasts, cut into 1-inch cubes
  • 5 bacon strips, cooked
  • 1/8 teaspoon cayenne pepper
  • 1 small yellow onion, chopped
  • 1 red pepper, chopped
  • 3 teaspoons garlic powder
  • 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
  • 1/2 cup 2% milk
  • 1/3 cup sour cream
  • 2 tablespoons grated Parmesan cheese
Directions

  1. Cook tortellini according to package directions. 
  2. Meanwhile, in a large saucepan, cook and stir the chicken and cayenne pepper over medium heat until chicken is no longer pink. Cook bacon (we did it in the microwave) and crumble over chicken. 
  3. Add onion and red pepper; cook and stir until tender.  (For this step, we sautéed the onion and red pepper separately and served as a side, so each person was able to choose if they wanted it or not)
  4. Add garlic powder; cook 1 minute longer.
  5. In a small bowl, combine the soup, milk, sour cream and cheese; stir into chicken mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes.
  6. Drain tortellini; add to chicken mixture. Heat through.
It's a pretty simple meal to pull together.  I hope you enjoy it as much as we did!
