I'll admit it.  I'm not the biggest fan of chicken.  I could eat pasta every single day - chicken, not so much.  So when E wanted to try Honey-Citrus Chicken Sandwiches, I was a bit hesitant, but interested.  Let me just say, I could handle this one probably once a week!  I think what even made it better was the homemade rolls.  We used the same Pizza Dough recipe that we use to make our homemade pizza - instead of rolling it out, just separate into 6 balls & let rise for at least a half hour.  Bake at 375 degrees until golden brown (~ 15 minutes).  Cut in half and build your sandwich!

Be sure to note the marinating time and the time needed to make the pizza dough.  Other than the prep, it is quick and easy!

Prep Time: 10 minutes (+ marinating)     Grill: 10 minutes     Yield: 6 servings

Ingredients

  • 6 boneless skinless chicken breast halves (~ 4 ounces each)
  • 1/4 cup orange juice
  • 1/4 cup lemon juice
  • 1/4 cup honey
  • 2 tablespoons vegetable oil
  • 1 tablespoon prepared mustard
  • 1/8 to 1/4 teaspoon cayenne pepper
  • 6 slice Monterey Jack or Muenster cheese (optional)
  • 6 rolls (Kaiser or homemade)
  • 6 thin tomato slices
  • 6 red onion slices
  • shredded lettuce

Directions

  1. Flatten chicken breast evenly to 1/4-inch thickness; set aside.
  2. In a large resealable plastic bag, combine the orange and lemon juices, honey, oil, mustard, and cayenne pepper.  Add chicken breasts; seal bag and turn to coat.  Refrigerate for 6-8 hours or overnight.
  3. Drain bag and discard marinade.
  4. Grill, uncovered, over medium-low heat, turning occasionally, for 10-12 minutes or until juices run clear.
  5. Optional: add slice of cheese to each chicken breast and grill 1-2 minutes longer or until cheese begins to melt.
  6. Serve on rolls with tomato, onion and lettuce.  
  7. Enjoy!
