Chunky Chicken Salad


This is one of my favorite summer dinners.  There is nothing more fresh than eating a lettuce wrap.  The raisins add the perfect sweetness to this dish, and the celery is just the right amount of crunch!  The best part is that you can prepare this meal early - because it is even better chilled.

For the chicken, I boiled it and then tossed it right into my stand mixer.  No more fork method - I had shredded chicken in about 30 seconds!

Eliorah: Chunky Chicken Salad



Prep/Total Time: 25 minutes     Yield: 8 servings

Ingredients

  • 1/2 mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 cups shredded chicken
  • 1-1/4 cups seedless red grapes, halved
  • 1/2 cup chopped pecans
  • 1/2 cup chopped celery
  • 1/4 cup chopped sweet onion (optional)
  • Romaine leaves

Directions

  1. In a large bowl, combine the mayonnaise, sour cream, lemon juice, salt, and pepper.
  2. Add the chicken, grapes, pecans, celery and (optional) onion.
  3. Mix lightly to coat.
  4. Serve on romaine & enjoy!
